1. Pulled Pork Sandwiches

Sandwiches are generally the first thing that springs to mind when thinking of recipes for bbq pulled pork.

All you need to do is fill the sandwiches with the leftover pulled pork, barbecue sauce, coleslaw, and buns. Here's how to make these tasty sandwiches.

Ingredients

  • 2 cups of leftover pulled pork
  • 1 cup of pork broth
  • 1 cup of barbecue sauce
  • 1 cup of coleslaw
  • 4 buns

Instructions

  • First, prepare the coleslaw. Mix all the coleslaw ingredients in a big bowl, then place it in the fridge to cool.
  • Combine pork broth and barbecue sauce in a large pot over high heat.
  • Next, add your leftover pulled pork to the mixture.
  • Bring to a boil, then reduce the heat to a simmer. Cover the pot and cook the pork for about half an hour, or until the pulled pork is tender to your liking.
  • Lastly, set out your buns and place the shredded pork on them. Add the coleslaw next, and your pulled pork sandwich is ready to eat.

Pro tip: You can toast the buns for extra crispiness. Simply place the buns on a skillet for about a minute (or until they are charred to your preference) and flip them over.

  • Cut the sweet potatoes into 1/2-inch dice and preheat the oven to 400 degrees. The smaller cuts will cook faster. Next, slice the red onions.
  • Place a large cast iron skillet over medium heat and add the olive oil. Next, add the diced potatoes and stir in the olive oil.
  • Stir the sweet potatoes occasionally while cooking them over medium heat for 10 minutes, or until they are almost done. Pay attention to the potatoes so they don't burn.
  • Add the red onions in when the potatoes have started browning and stir for 5 minutes. Next, add salt and pepper and season as desired. If your shredded pork is already salty, use less salt.
  • Now, add the leftover pulled pork and cook for an additional two minutes.
  • Next, use a wooden spoon to make four holes in the concoction. Break one egg into each hole, and add salt and ground pepper to the eggs for seasoning.
  • Afterward, take the pan off the cooker and place it in the oven to cook for 5–10 minutes. When ready to serve, carefully remove the pan from the oven garnish with your favorite herbs.
