Chip steak, also known as sizzle steaks are thinly sliced cuts of bottom round beef. The whole chunk is frozen for 24 hrs before it is thinly sliced and allowed to thaw, creating chip steak.

When my grandfather introduced me to enchiladas, I was instantly captured by the tenderness and intense taste of the meat. I wanted to find out how I could make some myself. I learned that the meat I had enjoyed so much was chip steak and that I could make plenty more snacks and wholesome meals with this cut of beef

What Kind of Beef is Chipped Beef?

Chip steak was invented in 1963 by William Dubil, when he accidentally froze a cut of bottom round beef.

He cut up the beef into thin slices and let it thaw in the refrigerated display believing it would go bad but it did not. He named this meat chip steak and since then, it has been a popular cut for making easy fast tasty recipes because it is such an easy cut to cook.

Chip or chipped steak also referred to as chipped beef, was initially made only from the round cut.

Today, various cuts, including loins, are used to satisfy popular demand. It’s particularly easy to make steak sandwiches. Chipped steak is also a staple in many Mexican recipes such as tacos and enchiladas.

The meat cuts are first stripped of all fat, bone, and ligament before being frozen for a minimum of 24 hours.

Then, with the help of an industrial meat slicer, the beef is cut into paper-thin patties and stacked. These strips typically range between 4.5 to 6 inches each. Six thin slices make up one chipped steak patty, becoming an easy substitute for ground beef.

Some processing plants smoke the dried cuts to add an intense smokey taste to their chip steaks. Today, chip steaks come in different sizes, flavors, and packaging but are more commonly in jars or placed flat in plastic packaging to allow for longer shelf life.

Chip Steak and Rice

In a pan, saute your chipped steak with diced onion and paprika. Add your mixed vegetables and a cup of beef broth. Once ready, serve with plain or fried rice.

Garlic Butter Chipped Steak

Seer the chipped steak on a skillet and season with salt and pepper. Add some butter and garlic paste and cook for 10 seconds. Add parsley and give it a good mix. Serve with rice or some mashed potatoes and a side of veggies.

Simply saute your chipped steak alongside onions, mushrooms, and peppers. Serve with your preferred type of egg dish. There’s a new breakfast or even breakfast-for-dinner option to enjoy.

Chop up your chipped steak and marinate overnight in lemon juice, soy sauce, mixed herbs, and garlic paste. Cook this in the air fryer for 8 – 10 minutes or in the oven till crisp. Enjoy with your favorite sauce, cheese, and a glass of wine.

Saute your chipped steak and veggies in a pan and set this mix in a bun or between bread. Sprinkle your favorite sauce and enjoy.

The National chip steak company is no longer in business today but chip steaks are available from select vendors.

You can easily get great quality frozen chip steak at your local grocery store or you can search online from various meat producers or famed wholesale meat suppliers like Philly’s Best Steak Company. These also offer delivery services to their clients.

Alternatively, you can buy fresh chip steaks from your local butcher. This way, you get to specify the cuts you prefer and have them sliced as thinly as you would like or even chopped up to your preference.
